Ingredients

  • 4 medium ripe tomatoes
  • ΒΌ cup red onion
  • 2 tbsp extra virgin olive oil
  • 8 kalamata olives
  • fresh basil
  • kosher salt
  • fresh pepper

Instructions

  1. Combine onions, olive oil, salt, and pepper in a bowl and let marinate for 5-10 minutes.
  2. Slice the tomatoes and arrange them on a plate.
  3. Pour the marinated olive oil and onions over the tomatoes and season with additional salt and pepper.
  4. Top with fresh basil and divide equally onto 4 plates.
