Instructions
- Slice the stem ends off the tomatoes and cut them into ½ inch thick slices.
- Spread the tomato slices on a platter, sprinkle with salt and pepper, and drizzle with olive oil. Let marinate for at least 15 minutes.
- Prepare the whipped feta sauce by blending all ingredients except olive oil, salt, and pepper until smooth, then mix in the olive oil and season to taste.
- If making homemade balsamic dressing, combine all ingredients in a jar and shake vigorously, or have store-bought dressing ready.
- For the toasted breadcrumbs, heat olive oil in a pan, add breadcrumbs and Italian seasoning, stirring until golden brown. Drain on paper towel.
- Spread the whipped feta on a plate, layer the marinated tomatoes on top, scatter arugula, drizzle with balsamic dressing, and top with toasted breadcrumbs.
- Serve immediately.
