Heirloom Tomato Salad with Whipped Feta

Ingredients

The salad

  • 2 large Heirloom Tomatoes
  • 2 tsp Extra Virgin Olive Oil
  • 1 pinch Flaky Sea Salt
  • 1 pinch freshly cracked Black Pepper
  • 1 cup fresh Arugula
  • 2 tbsp Balsamic Dressing
  • 1/4 cup Panko Breadcrumbs
  • 1/2 tsp Italian Seasoning

The whipped feta sauce

  • 1/4 cup Crumbled Feta
  • 2 tbsp Plain Greek Yogurt
  • 2 tbsp Whipped Cream Cheese
  • 1 tsp fresh Lemon Juice
  • 1/8 tsp dried Oregano
  • 1/4 tsp Honey or Agave Syrup
  • 1 tbsp Extra Virgin Olive Oil
  • 1 to taste Salt
  • 1 to taste freshly cracked Black Pepper

Instructions

  1. Slice the stem ends off the tomatoes and cut them into ½ inch thick slices.
  2. Spread the tomato slices on a platter, sprinkle with salt and pepper, and drizzle with olive oil. Let marinate for at least 15 minutes.
  3. Prepare the whipped feta sauce by blending all ingredients except olive oil, salt, and pepper until smooth, then mix in the olive oil and season to taste.
  4. If making homemade balsamic dressing, combine all ingredients in a jar and shake vigorously, or have store-bought dressing ready.
  5. For the toasted breadcrumbs, heat olive oil in a pan, add breadcrumbs and Italian seasoning, stirring until golden brown. Drain on paper towel.
  6. Spread the whipped feta on a plate, layer the marinated tomatoes on top, scatter arugula, drizzle with balsamic dressing, and top with toasted breadcrumbs.
  7. Serve immediately.
