Ingredients

  • 1 cup melted raw cacao butter
  • 1 cup raw cashews
  • 2 teaspoons pure peppermint extract
  • ¾ cup pure maple syrup
  • 3 tablespoons Goji berries (optional, for decor)

Instructions

  1. Line a loaf pan with parchment paper and melt the cacao butter in a double boiler until fully dissolved.
  2. Blend the raw cashews until finely ground, then add peppermint extract and maple syrup, blending until smooth.
  3. Once the cacao butter is melted, mix it into the cashew mixture until completely smooth.
  4. Pour the mixture into the loaf pan and smooth the top. Optionally, sprinkle with pulsed Goji berries for decoration.
  5. Freeze the fudge for 6 hours or until firm, then cut and serve chilled.
