White Chocolate Peppermint Fudge

Instructions
- Line a loaf pan with parchment paper and melt the cacao butter in a double boiler until fully dissolved.
- Blend the raw cashews until finely ground, then add peppermint extract and maple syrup, blending until smooth.
- Once the cacao butter is melted, mix it into the cashew mixture until completely smooth.
- Pour the mixture into the loaf pan and smooth the top. Optionally, sprinkle with pulsed Goji berries for decoration.
- Freeze the fudge for 6 hours or until firm, then cut and serve chilled.
