Peppermint Freezer Fudge

melted coconut oil (for chocolate)

Instructions
- Line a square cake pan with parchment paper.
- In a medium bowl, mix almond butter, cocoa powder, and melted coconut oil until combined.
- Add maple syrup and peppermint extract, and mix again.
- Melt the chocolate chips with the remaining teaspoon of coconut oil in the microwave in 20-second increments, stirring until smooth.
- Combine the melted chocolate with the fudge mixture and mix until smooth.
- Transfer the batter into the lined cake pan and spread evenly.
- Top with crushed peppermints.
- Freeze for 2-4 hours or until solid.
- Let sit for 5 minutes before removing from the pan and cut into squares.
