Ingredients

The squash

  • 1 medium Kabocha squash (2-3 pounds)

The seasoning

  • 3 tbsp Olive oil
  • ½ tbsp Garlic powder (optional)
  • ¾ tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Preheat the oven to 425°F (218°C) and prepare a baking sheet.
  2. Cut off the ends of the kabocha squash.
  3. Cut the squash in half and scoop out the seeds.
  4. Slice the squash into 1-inch wedges.
  5. Arrange the squash slices on a baking sheet in a single layer.
  6. Drizzle olive oil over the squash and season with garlic powder, salt, and pepper.
  7. Roast in the oven for 25-30 minutes, flipping halfway through, until tender and browned.
