Roasted Kabocha Squash

Ingredients

The squash

  • 1 medium kabocha squash

The seasoning

  • 2 tablespoons ghee, olive oil, avocado oil, or melted coconut oil
  • to taste Diamond Crystal kosher salt
  • to taste freshly ground black pepper

Instructions

  1. 1. Preheat the oven to 400°F with the rack in the middle.
  2. 2. Rinse the squash under running water and dry it. Peel if desired.
  3. 3. Cut off the top and bottom of the squash, then cut it in half and scoop out the seeds.
  4. 4. Cut the squash into thin wedges.
  5. 5. Toss the squash with your chosen fat and sprinkle with salt and pepper.
  6. 6. Place the squash in a single layer on a lined baking tray.
  7. 7. Roast for 30 minutes, flipping halfway through, until slightly crunchy outside and soft inside.
