Instructions
- 1. Preheat the oven to 425°F.
- 2. Cut the kabocha squash in half, seed it, and cut it into bite-sized pieces.
- 3. Place the squash on a rimmed baking sheet, drizzle with olive oil, and season with garlic powder, curry powder, salt, and pepper.
- 4. Gently toss the squash to combine and spread it out on the baking sheet.
- 5. Roast in the oven for 30 minutes, flipping halfway through.
