Ingredients

The squash

  • 1 kabocha squash, seeded and cut into hearty chunks

The seasoning

  • 2 teaspoon extra virgin olive oil
  • ½ teaspoon garlic powder
  • 1 teaspoon curry powder
  • to taste salt and pepper

Instructions

  1. 1. Preheat the oven to 425°F.
  2. 2. Cut the kabocha squash in half, seed it, and cut it into bite-sized pieces.
  3. 3. Place the squash on a rimmed baking sheet, drizzle with olive oil, and season with garlic powder, curry powder, salt, and pepper.
  4. 4. Gently toss the squash to combine and spread it out on the baking sheet.
  5. 5. Roast in the oven for 30 minutes, flipping halfway through.
