Instructions
- Preheat the oven to 325°F and line a baking sheet with parchment paper.
- In a large bowl, combine oats, nuts, coconut, cinnamon, and salt.
- Mix maple syrup, melted coconut oil, and vanilla, then drizzle over the oat mixture and stir to coat.
- Whisk the egg white until frothy and gently stir it into the granola mixture.
- Spread the granola evenly on the baking sheet and gently pat it down.
- Bake for 20-25 minutes, stirring halfway through, until golden brown.
- Remove from the oven and let cool completely without stirring.
- Sprinkle cranberries over the warm granola and crumble into chunks once cool.
