Healthy Granola

Instructions
- 1. Preheat the oven to 350°F and line a large, rimmed baking sheet with parchment paper.
- 2. In a large mixing bowl, combine oats, nuts and/or seeds, salt, and cinnamon, and stir to blend.
- 3. Pour in the oil, maple syrup and/or honey, and vanilla, mixing well until everything is coated.
- 4. Spread the granola mixture evenly on the prepared pan.
- 5. Bake for 21 to 24 minutes, stirring halfway through for even toasting.
- 6. Let the granola cool completely for at least 45 minutes before adding dried fruit and breaking it into pieces.
- 7. Store in an airtight container at room temperature for 1 to 2 weeks or freeze for up to 3 months.
