Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup shredded coconut
  • 1 cup pecans
  • ¾ cup maple syrup
  • 2 teaspoons ground cinnamon
  • ½ teaspoon fine sea salt

Instructions

  1. Preheat the oven to 350ºF and line a large baking sheet with parchment paper.
  2. In a large bowl, mix together the oats, coconut, pecans, maple syrup, cinnamon, and salt.
  3. Spread the mixture evenly on the lined baking sheet.
  4. Bake for about 20 minutes until lightly golden, stirring halfway through.
  5. Continue baking for another 5 to 8 minutes until slightly more golden, but do not exceed 30 minutes.
  6. Allow the granola to cool completely on the pan before removing.
  7. If desired, stir in any dried fruit after baking.
  8. Break the granola into smaller pieces and store in an airtight container.
