Ingredients

The salad

  • 1 large carrot, julienned
  • 2 cups cooked quinoa
  • 3 cups sliced red cabbage
  • 1 cup chopped red bell pepper
  • 1 cup chopped green bell pepper
  • 2 cups kale, chopped
  • ¼ cup cashews, chopped
  • ½ small lime

The dressing

  • ½ teaspoon ground ginger
  • 1 tablespoon maple syrup
  • 2 tablespoons tamari or liquid aminos
  • 1 teaspoon distilled white vinegar
  • ½ teaspoon sesame seeds
  • cup natural peanut butter
  • ¼ cup warm water
  • ¼ teaspoon crushed red pepper flakes

Instructions

  1. Whisk all dressing ingredients together in a bowl and set aside.
  2. In a separate bowl, combine all salad ingredients and squeeze half a lime over it.
  3. Drizzle the dressing over the salad and mix to combine.
  4. Serve and enjoy!
