Ingredients

  • 6 large egg yolks
  • ½ cup granulated sugar
  • 1 tablespoon lemon zest

  • 6 tablespoons unsalted butter

Instructions

  1. 1. Set up a double boiler by placing a heatproof bowl over a saucepan with simmering water.
  2. 2. Add egg yolks, granulated sugar, lemon zest, lemon juice, and salt to the bowl.
  3. 3. Whisk the mixture until well blended, continuing to whisk as it cooks.
  4. 4. Cook the mixture over heat until it thickens, about 10 minutes.
  5. 5. Remove from heat and whisk in butter pieces one at a time until melted.
  6. 6. Transfer the curd to a bowl or jar and cover with plastic wrap to prevent a skin from forming.
  7. 7. Cool and refrigerate for a few hours before storing in a sealed container.
