Easy Lemon Curd

Instructions
- 1. Set up a double boiler by placing a heatproof bowl over a saucepan with simmering water.
- 2. Add egg yolks, granulated sugar, lemon zest, lemon juice, and salt to the bowl.
- 3. Whisk the mixture until well blended, continuing to whisk as it cooks.
- 4. Cook the mixture over heat until it thickens, about 10 minutes.
- 5. Remove from heat and whisk in butter pieces one at a time until melted.
- 6. Transfer the curd to a bowl or jar and cover with plastic wrap to prevent a skin from forming.
- 7. Cool and refrigerate for a few hours before storing in a sealed container.
