Homemade Lemon Curd

Instructions
- Simmer the lemon juice in a saucepan until it reduces by half to about ⅓ cup.
- In a heatproof bowl, beat together the butter and sugar.
- Add the egg yolks, eggs, and salt to the mixture and stir in the lemon juice.
- Place the bowl over simmering water and stir constantly for about 10 minutes until the mixture thickens.
- Strain the curd through a strainer into a bowl.
- Cover the surface with plastic wrap and refrigerate.
