Homemade Lemon Curd

Ingredients

  • ¾ cup lemon juice (from 3 lemons)
  • 4 tablespoons unsalted butter (at room temperature)
  • ½ cup white granulated sugar
  • 2 large egg yolks
  • 2 large eggs
  • ¼ teaspoon kosher salt

Instructions

  1. Simmer the lemon juice in a saucepan until it reduces by half to about ⅓ cup.
  2. In a heatproof bowl, beat together the butter and sugar.
  3. Add the egg yolks, eggs, and salt to the mixture and stir in the lemon juice.
  4. Place the bowl over simmering water and stir constantly for about 10 minutes until the mixture thickens.
  5. Strain the curd through a strainer into a bowl.
  6. Cover the surface with plastic wrap and refrigerate.
