Instructions
- Whisk together sugar, egg, and lemon juice in a small sauce pot until smooth.
- Place the pot over medium heat and whisk continuously until the mixture thickens, about 5 minutes.
- Remove the pot from heat and add butter one tablespoon at a time, whisking until melted.
- Transfer the lemon curd to an airtight container and refrigerate until cooled.
