Instructions
- Prepare the goat cheese spread by mixing goat cheese, chives, olive oil, garlic, and onion powder in a bowl until smooth.
- In a separate bowl, whisk the eggs and salt together.
- Heat olive oil in a nonstick skillet, add spinach, and cook until wilted.
- Pour the eggs over the spinach and cook without stirring until the edges set, then fold the omelet and cook until fully set.
- Slice the omelet into four pieces.
- Assemble the sandwiches by spreading goat cheese on each muffin half, adding an omelet piece, tomato, red onion, avocado, and microgreens.
- Serve with hot sauce.
