Ingredients

Goat Cheese Spread

  • 4 ounces goat cheese
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic
  • ¼ teaspoon onion powder

For the Sandwiches

  • 4 large eggs
  • ¼ teaspoon sea salt
  • 2 teaspoons extra-virgin olive oil
  • 3 ounces spinach
  • 4 pieces English muffins, halved and toasted
  • 4 slices tomato
  • to taste thinly sliced red onion
  • to taste avocado slices (optional)
  • to taste microgreens or sunflower sprouts (optional)
  • for serving hot sauce

Instructions

  1. Prepare the goat cheese spread by mixing goat cheese, chives, olive oil, garlic, and onion powder in a bowl until smooth.
  2. In a separate bowl, whisk the eggs and salt together.
  3. Heat olive oil in a nonstick skillet, add spinach, and cook until wilted.
  4. Pour the eggs over the spinach and cook without stirring until the edges set, then fold the omelet and cook until fully set.
  5. Slice the omelet into four pieces.
  6. Assemble the sandwiches by spreading goat cheese on each muffin half, adding an omelet piece, tomato, red onion, avocado, and microgreens.
  7. Serve with hot sauce.
