Ingredients

The omelet

  • 2 large eggs
  • 1 tablespoon chopped chives
  • teaspoon salt
  • teaspoon pepper
  • ½ ounce crumbled goat cheese

Toppings

  • 2 slices heirloom tomato
  • 1 ounce sliced Nova Lox
  • a few sliced red onion
  • ½ tablespoon capers
  • a few parsley leaves

For cooking

  • 1 spray cooking spray

Instructions

  1. Beat the eggs with chopped chives, salt, and pepper in a small bowl.
  2. Heat a medium nonstick skillet over medium-low heat and spray with cooking spray.
  3. Pour the egg mixture into the skillet and cook until set, about 2 to 3 minutes.
  4. Top the omelet with crumbled goat cheese and transfer it to a plate.
  5. Add sliced tomatoes, Nova Lox, red onion, capers, parsley, and additional chives on top.
