Instructions
- Beat the eggs with chopped chives, salt, and pepper in a small bowl.
- Heat a medium nonstick skillet over medium-low heat and spray with cooking spray.
- Pour the egg mixture into the skillet and cook until set, about 2 to 3 minutes.
- Top the omelet with crumbled goat cheese and transfer it to a plate.
- Add sliced tomatoes, Nova Lox, red onion, capers, parsley, and additional chives on top.
