Two-Egg Omelet

Ingredients

  • 2 eggs eggs
  • to taste none salt
  • to taste none pepper
  • 1 tablespoon butter
  • 1/4 cup caramelized onions
  • 1/4 cup goat cheese

Instructions

  1. Beat the eggs until well mixed and season with salt and pepper.
  2. Prepare your ingredients next to the stovetop.
  3. Heat a 9-inch skillet over high heat and add butter, letting it sizzle.
  4. Tilt the pan to coat it with butter and pour the eggs into the center.
  5. Allow the eggs to sit briefly, then gently move them around the pan to cook evenly.
  6. Once the eggs are mostly set, sprinkle caramelized onions and goat cheese on top.
  7. If the top of the eggs is too soft, let it sit for a minute to finish cooking.
  8. Run a spatula around the edges, fold the omelet, and gently transfer it to a plate.
