Instructions
- Beat the eggs until well mixed and season with salt and pepper.
- Prepare your ingredients next to the stovetop.
- Heat a 9-inch skillet over high heat and add butter, letting it sizzle.
- Tilt the pan to coat it with butter and pour the eggs into the center.
- Allow the eggs to sit briefly, then gently move them around the pan to cook evenly.
- Once the eggs are mostly set, sprinkle caramelized onions and goat cheese on top.
- If the top of the eggs is too soft, let it sit for a minute to finish cooking.
- Run a spatula around the edges, fold the omelet, and gently transfer it to a plate.
