Simple Goat Cheese and Egg Toasts
Ingredients
The toast

hearty whole grain bread

ounces
goat cheese, softened

egg
fried or 2 eggs, scrambled

handful
fresh peas

to taste
salt
The garnish
-
light sprinkling
chopped fresh dill (or mint, chives, parsley or basil)
Instructions
- 1. Boil water in a small pot for the peas and toast the bread.
- 2. Spread goat cheese generously on the toasted bread.
- 3. Cook the peas in boiling water for about 90 seconds, then drain and return to the pot.
- 4. If frying the egg, add the peas on top of the goat cheese and press gently.
- 5. Prepare the egg(s) as desired, seasoning scrambled eggs with salt and pepper and adding peas before they set.
- 6. Place the cooked egg(s) on the toast and top with fresh herbs and a sprinkle of salt.
