Simple Goat Cheese and Egg Toasts

Ingredients

The toast

  • 1 slice hearty whole grain bread
  • 1 ½ ounces goat cheese, softened
  • 1 egg fried or 2 eggs, scrambled
  • 1 handful fresh peas
  • to taste salt

The garnish

  • light sprinkling chopped fresh dill (or mint, chives, parsley or basil)

Instructions

  1. 1. Boil water in a small pot for the peas and toast the bread.
  2. 2. Spread goat cheese generously on the toasted bread.
  3. 3. Cook the peas in boiling water for about 90 seconds, then drain and return to the pot.
  4. 4. If frying the egg, add the peas on top of the goat cheese and press gently.
  5. 5. Prepare the egg(s) as desired, seasoning scrambled eggs with salt and pepper and adding peas before they set.
  6. 6. Place the cooked egg(s) on the toast and top with fresh herbs and a sprinkle of salt.
