Harissa, Smashed Avocado + Egg Toast with Goat Cheese and Honey Drizzle

Ingredients

  • 2 slices whole grain bread
  • 1 tablespoon Harissa
  • ½ avocado pitted and peeled
  • pinch salt
  • pinch pepper
  • 1 tablespoon oil-packed sun-dried tomatoes
  • 2 ounces goat cheese
  • 1 teaspoon honey
  • 1 teaspoon fresh lemon zest
  • 1-2 eggs cooked

Instructions

  1. Preheat the broiler to high.
  2. Mash the avocado with a pinch of salt and pepper in a small bowl.
  3. Toast the bread and spread Harissa on both pieces.
  4. Spread the mashed avocado over the Harissa.
  5. Top with sun-dried tomatoes and crumbled goat cheese.
  6. Cook the eggs to your liking.
  7. Broil the toast for 1-2 minutes until toasty.
  8. Drizzle the toast with honey and top with eggs.
  9. Zest lemon over the top and sprinkle with salt and pepper.
