Ingredients

The toast

  • 4 slices whole grain toast

The avocado

  • 4 whole avocado, mashed

The eggs

  • 4 whole large eggs

The seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Boil water in a medium saucepan.
  2. Add whole eggs to boiling water and cover, boiling for 6 ½ minutes.
  3. Prepare an ice water bath for the eggs.
  4. After 6 ½ minutes, transfer eggs to the ice water bath for 3 minutes.
  5. Gently remove the shells from the eggs.
  6. Toast the whole grain bread.
  7. Mash the avocado in a bowl.
  8. Assemble the toast by placing it on a plate, topping with 1/3 cup of mashed avocado and a soft boiled egg.
  9. Season with salt and pepper, then serve.
