Smashed Avocado Toast with Soft Boiled Egg

Instructions
- Boil water in a medium saucepan.
- Add whole eggs to boiling water and cover, boiling for 6 ½ minutes.
- Prepare an ice water bath for the eggs.
- After 6 ½ minutes, transfer eggs to the ice water bath for 3 minutes.
- Gently remove the shells from the eggs.
- Toast the whole grain bread.
- Mash the avocado in a bowl.
- Assemble the toast by placing it on a plate, topping with 1/3 cup of mashed avocado and a soft boiled egg.
- Season with salt and pepper, then serve.
