Simple Poached Egg and Avocado Toast

Ingredients

The toast

  • 2 slices whole grain bread
  • avocado avocado
  • 2 tablespoons shaved Parmesan cheese
  • to taste salt
  • to taste pepper
  • to taste fresh herbs (parsley, thyme, or basil)
  • for serving quartered heirloom tomatoes

The eggs

  • 2 eggs eggs

Instructions

  1. Boil a pot of water and add the metal rims of two mason jar lids to the bottom.
  2. Once boiling, turn off the heat and crack an egg into each rim.
  3. Cover the pot and poach the eggs for 4 to 5 minutes depending on desired doneness.
  4. While the eggs cook, toast the bread and smash the avocado on each slice.
  5. Lift the poached eggs out with a spatula and remove the rims.
  6. Place the eggs on the toast, sprinkle with Parmesan, salt, pepper, and fresh herbs.
  7. Serve with quartered heirloom tomatoes.
