Simple Poached Egg and Avocado Toast

The eggs
Instructions
- Boil a pot of water and add the metal rims of two mason jar lids to the bottom.
- Once boiling, turn off the heat and crack an egg into each rim.
- Cover the pot and poach the eggs for 4 to 5 minutes depending on desired doneness.
- While the eggs cook, toast the bread and smash the avocado on each slice.
- Lift the poached eggs out with a spatula and remove the rims.
- Place the eggs on the toast, sprinkle with Parmesan, salt, pepper, and fresh herbs.
- Serve with quartered heirloom tomatoes.
