Avocado Toast with Poached Eggs

Instructions
- Boil lightly salted water in a medium pot, optionally adding vinegar.
- Prepare the avocado by mashing it with lemon zest, lemon juice, olive oil, salt, and pepper.
- Toast the bread slices.
- Poach the eggs in the simmering water for 2-3 minutes until the whites are set.
- Spread half of the avocado mixture on each slice of toast, then top with sliced radishes and arugula.
- Drizzle with olive oil, lemon juice, and additional salt.
- Carefully place a poached egg on top of each toast.
- Sprinkle with salt, pepper, and Zaatar spice, adding chili flakes or zhoug if desired.
- Serve immediately while the yolks are warm.
