Avocado Toast with Poached Eggs

Ingredients

The toast

  • 2 slices wholesome bread
  • 1 large ripe avocado
  • 1 lemon zest and juice
  • 3 teaspoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup baby arugula
  • 4 radishes very thinly sliced

The eggs

  • 2 large eggs
  • pinch salt
  • pinch pepper
  • generous pinch Zaatar spice
  • optional Aleppo chili flakes
  • optional zhoug sauce

Instructions

  1. Boil lightly salted water in a medium pot, optionally adding vinegar.
  2. Prepare the avocado by mashing it with lemon zest, lemon juice, olive oil, salt, and pepper.
  3. Toast the bread slices.
  4. Poach the eggs in the simmering water for 2-3 minutes until the whites are set.
  5. Spread half of the avocado mixture on each slice of toast, then top with sliced radishes and arugula.
  6. Drizzle with olive oil, lemon juice, and additional salt.
  7. Carefully place a poached egg on top of each toast.
  8. Sprinkle with salt, pepper, and Zaatar spice, adding chili flakes or zhoug if desired.
  9. Serve immediately while the yolks are warm.
