Ricotta Avocado Toast with Poached Egg

Instructions
- Fill a large skillet with about 1 ½ inches of water and bring it to a boil.
- Toast the bread until slightly browned and set aside.
- Add a splash of white vinegar to the boiling water and gently add the eggs, spacing them out.
- Cover the skillet and turn off the heat, letting the eggs poach for 4-5 minutes.
- Spread 1 ½ tablespoons of ricotta on each slice of toast, followed by ¼ cup of mashed avocado and 1 tablespoon of harissa.
- Once the eggs are done, carefully remove them from the water and place on top of the toast.
- Garnish with sliced green onions and serve.
