Ricotta Avocado Toast with Poached Egg

Ingredients

The toast

  • 4 slices whole wheat bread

The poached eggs

  • 1 teaspoon white vinegar
  • 4 eggs eggs

The toppings

  • 6 tablespoons ricotta cheese
  • 3 avocados mashed avocado
  • 4 tablespoons harissa
  • ¼ cup sliced green onions

Instructions

  1. Fill a large skillet with about 1 ½ inches of water and bring it to a boil.
  2. Toast the bread until slightly browned and set aside.
  3. Add a splash of white vinegar to the boiling water and gently add the eggs, spacing them out.
  4. Cover the skillet and turn off the heat, letting the eggs poach for 4-5 minutes.
  5. Spread 1 ½ tablespoons of ricotta on each slice of toast, followed by ¼ cup of mashed avocado and 1 tablespoon of harissa.
  6. Once the eggs are done, carefully remove them from the water and place on top of the toast.
  7. Garnish with sliced green onions and serve.
