Instructions
- Cook one egg at a time in a small skillet sprayed with non-stick cooking spray over medium heat to your desired doneness.
- Smash the avocado in a bowl and season with sea salt and black pepper.
- Spread hummus on each piece of toast, then add a layer of smashed avocado.
- Top with the cooked eggs and sprinkle with chopped tomatoes.
- Season with additional salt and pepper if desired, and serve immediately.
