Avocado, Hummus, and Egg Toast

Ingredients

The toast

  • 2 large eggs
  • 2 pieces toasted bread
  • 4 tablespoons Sabra Classic Hummus

The toppings

  • 1 medium avocado
  • ½ cup chopped grape tomatoes
  • to taste sea salt
  • to taste black pepper

Instructions

  1. Cook one egg at a time in a small skillet sprayed with non-stick cooking spray over medium heat to your desired doneness.
  2. Smash the avocado in a bowl and season with sea salt and black pepper.
  3. Spread hummus on each piece of toast, then add a layer of smashed avocado.
  4. Top with the cooked eggs and sprinkle with chopped tomatoes.
  5. Season with additional salt and pepper if desired, and serve immediately.
