Ingredients

The toast

  • 4 slices toasted bread

The avocado mixture

  • 2 avocados
  • 2 tsp lemon juice
  • to taste salt
  • to taste pepper

Toppings

  • ½ cup feta cheese
  • 1 cup cherry tomatoes, halved
  • ¼ cup basil
  • to taste balsamic vinegar

Instructions

  1. Cut the avocados in half and scoop the flesh into a small bowl.
  2. Add lemon juice, salt, and pepper to the bowl and mash together with a fork.
  3. Spread the avocado mixture over the toasted bread.
  4. Top with feta cheese, halved cherry tomatoes, and basil.
  5. Season with additional salt and pepper if desired.
  6. Drizzle balsamic vinegar on top before serving.
