Ingredients

The toast

  • 2 slices whole grain toast

The avocado mash

  • avocado ripe avocado
  • 1 tsp lemon juice
  • to taste salt
  • to taste black pepper

The topping

  • 2 slices tomato
  • 1 tsp balsamic glaze

Instructions

  1. Toast the bread until golden brown.
  2. Mash a third of the avocado and squeeze lemon juice over it.
  3. Spread the avocado mash over the toasted bread and season with salt and pepper.
  4. Top with thick slices of fresh tomato and season again with salt and pepper.
  5. Optionally, drizzle with balsamic glaze before serving.
