Ingredients

The filling

  • 6 large eggs
  • 1 teaspoon olive oil
  • ½ onion chopped
  • 2 cloves garlic chopped
  • 2 bell peppers chopped
  • ½ pound fresh baby spinach chopped
  • to taste salt
  • to taste pepper

The sandwich

  • 6 English Muffins
  • 6 slices cheddar cheese or any cheese you like

Instructions

  1. Preheat the oven to 350°F and prepare a casserole dish.
  2. Heat olive oil in a pan and sauté onions with a pinch of salt until translucent.
  3. Add bell peppers and garlic, cooking for an additional two minutes.
  4. Stir in chopped spinach and season with salt and pepper until wilted.
  5. Let the vegetable mixture cool slightly, then combine with whisked eggs in a bowl.
  6. Pour the mixture into the baking dish and bake for about 30 minutes until set.
  7. Cool the baked egg mixture, then slice into six pieces.
  8. Assemble the sandwiches with a piece of baked egg and a slice of cheese in each muffin.
  9. Wrap each sandwich in plastic wrap and freeze for later use.
