Instructions
- Preheat the oven to 350°F and prepare a casserole dish.
- Heat olive oil in a pan and sauté onions with a pinch of salt until translucent.
- Add bell peppers and garlic, cooking for an additional two minutes.
- Stir in chopped spinach and season with salt and pepper until wilted.
- Let the vegetable mixture cool slightly, then combine with whisked eggs in a bowl.
- Pour the mixture into the baking dish and bake for about 30 minutes until set.
- Cool the baked egg mixture, then slice into six pieces.
- Assemble the sandwiches with a piece of baked egg and a slice of cheese in each muffin.
