Ingredients

The eggs

  • 12 large eggs
  • ¾ cups cottage cheese
  • ½ tsp salt
  • ¼ tsp black pepper

The vegetables

  • 1 cup bell pepper, diced small
  • cup sweet onion, chopped
  • 2 cups baby spinach, chopped

The cheese

  • ¾ cup sharp cheddar cheese, shredded

For serving

  • to taste English muffins, sliced
  • to taste cheese
  • to taste bacon
  • to taste avocado

Instructions

  1. Preheat the oven to 325°F and line a rimmed baking sheet with parchment paper, spraying the sides with non-stick spray.
  2. Blend the eggs, cottage cheese, salt, and pepper until smooth.
  3. Pour the blended mixture into the sheet pan and sprinkle the diced vegetables and cheese over it, gently swirling to combine.
  4. Bake for 20-25 minutes or until the eggs are set, checking frequently to prevent overbaking.
  5. Slice into 12 pieces and serve on English muffins or bagels.
