Ingredients

The main ingredients

  • 18 large eggs
  • ¼ cup mayonnaise
  • ¼ cup nutritional yeast
  • teaspoons garlic powder
  • 3 cups packed baby spinach
  • 3 pieces chicken apple sausage

The vegetables

  • 1 small red onion
  • 1 red bell pepper

The seasonings and oil

  • 2 tablespoons avocado oil
  • 2 teaspoons Diamond Crystal kosher salt
  • ¾ teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F and prepare a rimmed half sheet pan with oil and parchment paper.
  2. Toss the sliced onion and diced bell pepper with oil, salt, and pepper, then roast in the oven for 15 minutes.
  3. While the vegetables roast, blend the eggs, mayonnaise, nutritional yeast, garlic powder, salt, and pepper until combined.
  4. After 15 minutes, add baby spinach to the pan and stir until slightly wilted.
  5. Pour the egg mixture over the vegetables and scatter the sausage pieces on top.
  6. Bake for 10 to 13 minutes until the eggs are puffed and cooked through.
  7. Cool the sheet pan eggs before cutting into 12 pieces and serving.
