Fluffy Sheet Pan Eggs

Ingredients

  • 5 units eggs
  • ½ cup shredded gruyere cheese
  • ¼ cup full fat cottage cheese
  • ¼ teaspoon kosher salt
  • pinch black pepper

Instructions

  1. Preheat the oven to 300ºF and place a baking dish filled with 1 inch of water on the bottom rack.
  2. Blend the eggs, cheese, cottage cheese, salt, and pepper in a blender on high for 20 seconds until light and frothy.
  3. Grease a 1/4 sheet pan (9×13) with cooking spray, line with parchment paper, and spray again.
  4. Pour the egg mixture into the prepared sheet pan and bake for 30-35 minutes, or until the center is just set.
  5. Remove from the oven, let cool for 5 minutes, slice into portions, and serve.
