Ingredients

The base

  • 12 pieces English muffins
  • 8-9 pieces large eggs
  • 2-3 tablespoons water
  • ½ teaspoon kosher salt
  • ½-1 teaspoon green Tabasco sauce
  • to taste butter

The fillings

  • to taste cheese (pepper jack or cheddar)
  • to taste thinly sliced honey ham
  • to taste precooked bacon
  • to taste precooked sausage patties
  • to taste additional toppings (sliced bell pepper, onions, avocado, tomato, etc.)

Instructions

  1. Preheat the oven to 350°F and lightly grease a whoopie pie pan.
  2. Blend the eggs, water, Tabasco sauce, and kosher salt in a blender until combined.
  3. Pour the egg mixture into the whoopie pie pan cavities and bake for 8-11 minutes until puffed and set.
  4. While the eggs bake, prepare the toppings and cut the English muffins in half.
  5. Toast the English muffins under the broiler for 2-3 minutes until golden.
  6. Assemble the sandwiches by placing the meat on the muffin bottoms, topping with egg and cheese, and closing with the muffin tops.
  7. Serve immediately or freeze for later use.
