Large Batch Egg Breakfast Sandwiches

Ingredients

  • 1 each egg
  • to taste none butter
  • 1 each English muffin
  • 1 slice cheese
  • 1 slice Canadian bacon
  • to taste none salt
  • to taste none pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Butter each well of a jumbo muffin tin and add 1 tablespoon of water to each.
  3. Crack one egg into each muffin cup without adding salt and pepper.
  4. Bake the eggs for about 10 minutes, checking for desired doneness.
  5. While the eggs are baking, place buttered English muffin halves on a baking sheet and lay out Canadian bacon on the other side.
  6. Once the eggs are done, cover them with foil and set aside.
  7. Broil the baking sheet, watching carefully until the muffins are toasted and the Canadian bacon is heated.
  8. When the muffins are toasted, place a slice of cheese on half of them and return to the oven to melt.
  9. Remove from the oven, top each muffin with an egg, add salt and pepper, and Canadian bacon.
