Instructions
- To poach the eggs in the microwave, add ½ cup water to a ramekin and gently break an egg into it. Cover and microwave for 1 minute, adding increments as needed.
- To cook the eggs on the stovetop, spray a pan with cooking spray, crack an egg into it, and cook to desired doneness.
- To cook eggs in the oven, preheat to 375°F, spray a muffin tin, crack eggs into the tins, cover with water, and bake for 8-10 minutes.
- While the eggs are cooking, toast the English muffins and melt a slice of cheese on each half under the broiler.
- Heat the Canadian bacon in the microwave for 30 seconds.
- Assemble the sandwiches by layering the cheese-covered muffin half with an egg and two pieces of Canadian bacon, then top with the other muffin half.
- Serve hot, or refrigerate and warm before eating. To freeze, wrap tightly and store in a freezer bag.
