Healthy Egg McMuffin

Ingredients

  • 6 pieces English muffins
  • 6 slices cheddar cheese
  • 12 slices Canadian bacon
  • 6 pieces large eggs

Instructions

  1. To poach the eggs in the microwave, add ½ cup water to a ramekin and gently break an egg into it. Cover and microwave for 1 minute, adding increments as needed.
  2. To cook the eggs on the stovetop, spray a pan with cooking spray, crack an egg into it, and cook to desired doneness.
  3. To cook eggs in the oven, preheat to 375°F, spray a muffin tin, crack eggs into the tins, cover with water, and bake for 8-10 minutes.
  4. While the eggs are cooking, toast the English muffins and melt a slice of cheese on each half under the broiler.
  5. Heat the Canadian bacon in the microwave for 30 seconds.
  6. Assemble the sandwiches by layering the cheese-covered muffin half with an egg and two pieces of Canadian bacon, then top with the other muffin half.
  7. Serve hot, or refrigerate and warm before eating. To freeze, wrap tightly and store in a freezer bag.
