Ingredients

The Sandwich Base

  • 6 pieces English Muffins

The Filling

  • 6 pieces Eggs
  • 6 slices Turkey Bacon
  • 1 piece Tomato, chopped
  • cup Red Onion, chopped
  • 1 handful Spinach, chopped
  • to taste Sea Salt
  • to taste Black Pepper

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with tin foil for the bacon.
  2. Place the turkey bacon on the baking sheet and bake for 15-17 minutes.
  3. While the bacon cooks, wash and chop the tomato, spinach, and red onion.
  4. In a bowl, whisk the eggs and mix in the chopped veggies.
  5. Grease a silicone donut pan or casserole dish and pour the egg mixture in.
  6. Bake the egg mixture for 20-25 minutes until fully cooked.
  7. Slice and toast the English muffins if desired.
  8. Assemble the sandwiches by adding the baked eggs and bacon to the English muffins.
  9. Wrap the sandwiches in foil and freeze for up to three months.
  10. To eat, reheat the frozen sandwiches and enjoy.
