Instructions
- Preheat the oven to 400°F and prepare a baking sheet with tin foil for the bacon.
- Place the turkey bacon on the baking sheet and bake for 15-17 minutes.
- While the bacon cooks, wash and chop the tomato, spinach, and red onion.
- In a bowl, whisk the eggs and mix in the chopped veggies.
- Grease a silicone donut pan or casserole dish and pour the egg mixture in.
- Bake the egg mixture for 20-25 minutes until fully cooked.
- Slice and toast the English muffins if desired.
- Assemble the sandwiches by adding the baked eggs and bacon to the English muffins.
- Wrap the sandwiches in foil and freeze for up to three months.
- To eat, reheat the frozen sandwiches and enjoy.
