Make Ahead Freezer Breakfast Sandwiches

Instructions
- Preheat the oven to 350°F and grease a 12-count muffin tin.
- Crack one egg into each muffin tin hole and beat lightly with a fork, seasoning with salt and pepper.
- Bake for 12 minutes or until the eggs are firm, then remove and let cool.
- On a piece of plastic wrap, place the bottom half of an English muffin.
- Layer with a slice of ham, a baked egg, and a slice of cheese, then top with the muffin top.
- Wrap each sandwich tightly in plastic wrap and set aside.
- Repeat the assembly for all muffins, ham, eggs, and cheese.
- Place the wrapped sandwiches in a sealed freezer bag and freeze.
- To reheat, unwrap a sandwich, wrap it in a moist paper towel, and microwave in 30-45 second intervals until heated through.
