Ingredients

  • 12 large eggs eggs
  • cups sauteed vegetables
  • 12 whole grain English muffins English muffins
  • 12 thick slices ham, Canadian bacon or deli meat
  • 12 slices reduced fat cheese
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 350°F and grease a 12-count muffin tin.
  2. Crack one egg into each muffin tin hole and beat lightly with a fork, seasoning with salt and pepper.
  3. Bake for 12 minutes or until the eggs are firm, then remove and let cool.
  4. On a piece of plastic wrap, place the bottom half of an English muffin.
  5. Layer with a slice of ham, a baked egg, and a slice of cheese, then top with the muffin top.
  6. Wrap each sandwich tightly in plastic wrap and set aside.
  7. Repeat the assembly for all muffins, ham, eggs, and cheese.
  8. Place the wrapped sandwiches in a sealed freezer bag and freeze.
  9. To reheat, unwrap a sandwich, wrap it in a moist paper towel, and microwave in 30-45 second intervals until heated through.
