Ingredients

  • 6 links Chicken Sausage
  • 6 slices Reduced Fat Cheddar Cheese
  • 6 pieces English Muffins
  • 7 large eggs

Instructions

  1. Cook the chicken sausage links in a pan according to package instructions.
  2. Whisk eggs with a splash of half and half, salt, and pepper.
  3. Spray a skillet with cooking spray, heat to medium, and pour in the eggs.
  4. Allow the bottom to set, then flip and cook the other side, being careful not to overcook.
  5. Toast the English muffins, optionally adding a small bit of butter.
  6. Move the cooked egg to a cutting board and cut out circles to fit the muffins.
  7. Cut the sausage links in half vertically.
  8. Assemble the sandwiches by layering cheese, egg, and sausage on the muffin.
  9. Store the sandwiches in the fridge for up to 5 days without freezing.
  10. Reheat in the microwave wrapped in a paper towel, starting with 30 seconds, then checking and continuing in 15-second intervals.
