Instructions
- Preheat the broiler and grease a baking sheet.
- Place sausage and spinach on the baking sheet, drizzle with olive oil, and sprinkle with salt.
- Broil for 4 minutes, stirring halfway through.
- Preheat the oven to 350ºF.
- In a large bowl, whisk together eggs and milk.
- Add onion, garlic, and sun-dried tomatoes to the baking sheet, mix with sausage and spinach, then pour the egg mixture over it and combine.
- Bake for 18-22 minutes until firm in the middle.
- Let cool for at least 10 minutes, then cut into 12 square patties.
- Assemble sandwiches by placing an egg patty on one half of an English muffin, topping with cheese, and closing with the other half.
- Wrap sandwiches for freezing or toast the muffins if eating immediately.
