Ingredients

Egg Patty Ingredients

  • 5 oz fresh spinach
  • 1 teaspoon olive oil
  • 12 links pre-cooked breakfast sausage, sliced
  • 14 large eggs
  • cup milk
  • ½ medium white onion, finely diced
  • ½ tablespoon minced garlic
  • ½ cup sun-dried tomatoes
  • teaspoon salt
  • teaspoon ground black pepper

Assembly Ingredients

  • 12 slices cheese
  • 12 English muffins any kind

Instructions

  1. Preheat the broiler and grease a baking sheet.
  2. Place sausage and spinach on the baking sheet, drizzle with olive oil, and sprinkle with salt.
  3. Broil for 4 minutes, stirring halfway through.
  4. Preheat the oven to 350ºF.
  5. In a large bowl, whisk together eggs and milk.
  6. Add onion, garlic, and sun-dried tomatoes to the baking sheet, mix with sausage and spinach, then pour the egg mixture over it and combine.
  7. Bake for 18-22 minutes until firm in the middle.
  8. Let cool for at least 10 minutes, then cut into 12 square patties.
  9. Assemble sandwiches by placing an egg patty on one half of an English muffin, topping with cheese, and closing with the other half.
  10. Wrap sandwiches for freezing or toast the muffins if eating immediately.
