Instructions
- Preheat the oven to 350℉ and grease a large baking sheet.
- Whisk together eggs and milk in a bowl, seasoning with salt and pepper.
- Pour the egg mixture into the baking sheet and bake for 10-12 minutes until set.
- Prepare English muffin halves on another baking sheet, topping each with bacon or ham and cheese.
- Cut the baked eggs into 12 portions and place one on each muffin half, then top with the other half.
- Allow the sandwiches to cool for 20 minutes before wrapping in foil and freezing.
- Store wrapped sandwiches in the freezer for up to 3 months.
- To reheat, thaw overnight in the refrigerator or bake from frozen as directed.
