Ingredients

The sandwiches

  • 18 large eggs
  • cup milk of choice
  • 12 pieces English muffins
  • 12 slices bacon or sliced ham
  • 12 slices cheddar cheese
  • to taste salt
  • to taste black pepper

Optional toppings

  • to taste fresh spinach
  • to taste sliced tomatoes
  • to taste red onion
  • to taste sliced or mashed avocado
  • to taste hot sauce
  • to taste red pepper flakes

Instructions

  1. Preheat the oven to 350℉ and grease a large baking sheet.
  2. Whisk together eggs and milk in a bowl, seasoning with salt and pepper.
  3. Pour the egg mixture into the baking sheet and bake for 10-12 minutes until set.
  4. Prepare English muffin halves on another baking sheet, topping each with bacon or ham and cheese.
  5. Cut the baked eggs into 12 portions and place one on each muffin half, then top with the other half.
  6. Allow the sandwiches to cool for 20 minutes before wrapping in foil and freezing.
  7. Store wrapped sandwiches in the freezer for up to 3 months.
  8. To reheat, thaw overnight in the refrigerator or bake from frozen as directed.
