Instructions
- Preheat the oven to 350°F and grease an 8×8 pan.
- Whisk together eggs, milk, salt, and pepper in a bowl, then pour into the greased pan and bake for 20 minutes.
- Let the baked eggs cool for 10 minutes, then cut into 6 squares.
- While the eggs are baking, form the sausage into six patties and cook them in a pan over medium-high heat for about 4 minutes on each side.
- Open the English muffins and lay the bottoms out. Add a square of egg, a sausage patty, and a slice of cheese to each muffin, then top with the muffin tops.
- Wrap each sandwich individually in parchment paper and aluminum foil, then place them in a large ziplock bag and seal.
- To reheat, unwrap the sandwich and microwave for 2-3 minutes or heat in a toaster oven for 10-15 minutes at 400°F.
