Simple Hot Sausage Breakfast Sandwiches

Instructions
- Mash the hot Italian sausage and ground beef together in a bowl until combined, then form into two equal patties.
- Heat a cast iron skillet over medium heat and butter the inside halves of the English muffins.
- Place the muffins butter side down in the skillet and cook until browned, then flip and cook the exterior.
- Cook the sausage patties in the same skillet until browned and cooked through, adding cheese on top to melt.
- In the same skillet, crack in the eggs and cook to your desired doneness, seasoning with salt and pepper.
- Assemble the sandwiches with the muffin bottom, sausage patty with melted cheese, and fried egg on top.
- Add hot sauce and chives if desired, then serve hot.
