Ingredients

Dry Ingredients

  • 1 cup cassava flour
  • 1 cup pumpkin seeds
  • cup raw almonds
  • cup flax seeds
  • ½ cup sunflower seeds
  • 3 tsp chia seeds
  • ¼ cup psyllium husks
  • 1 tsp sea salt

Wet Ingredients

  • 2 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • ¼ cup melted coconut oil or avocado oil
  • 1 ¾ cups water

Instructions

  1. Preheat the oven to 375°F.
  2. Line a bread loaf pan with parchment paper and oil the inside.
  3. Roughly chop the almonds.
  4. In a medium bowl, combine the almonds and all dry ingredients.
  5. Add the wet ingredients to the dry mixture and mix until well combined; the dough should be thick.
  6. Transfer the mixture to the loaf pan, flattening it with a spatula.
  7. Bake for 35 minutes.
  8. Remove from the oven, flip the bread upside down, and bake for an additional 20 minutes.
  9. Let the bread cool for 2 hours before slicing.
