Ingredients

Vegetable Filling

  • 1 cup whole green beans
  • 3 ears fresh corn
  • ¼ cup chopped grilled onion
  • ½ cup halved or quartered cherry tomatoes
  • 1 teaspoon extra-virgin olive oil
  • 1 unit lime (juice)
  • ½ cup chopped cilantro
  • to taste unit sea salt
  • to taste unit freshly ground black pepper

Taco Assembly

  • 8-10 unit flour tortillas
  • ½ cup crumbled feta cheese
  • 1 unit serrano pepper (sliced, optional)
  • to taste unit tomatillo salsa

Instructions

  1. Blanch the green beans in boiling water for 3 minutes, then cool them in ice water and dry.
  2. Prepare the tomatillo salsa and chill it until ready to use.
  3. Heat the grill to medium and grill the green beans and corn until charred.
  4. Chop the green beans and slice the kernels off the corn, adding them to a bowl with onion and tomatoes.
  5. Add olive oil, lime juice, cilantro, salt, and pepper to the bowl and toss to combine.
  6. Grill or warm the tortillas.
  7. Assemble the tacos with the filling, feta cheese, and optional serrano slices, topping with salsa.
