Ingredients

The corn

  • 4 ears fresh sweet corn

For Mexican Grilled Corn

  • 2 tablespoons unsalted butter
  • 1 tablespoon finely grated Parmesan cheese or nutritional yeast
  • ½ teaspoon chili powder
  • ¼ teaspoon chipotle chile powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon kosher salt
  • 1 small lime (zest and juice)

For Classic Grilled Corn

  • 3 tablespoons unsalted butter
  • to taste kosher salt
  • to taste ground black pepper

Instructions

  1. Soak the corn in a large bowl of cold water for at least 10 minutes.
  2. Preheat the grill to medium heat.
  3. Remove the corn from the water and shake off excess water.
  4. Place the corn on the grill and cover, grilling for 15 to 20 minutes, turning every 5 minutes.
  5. For Mexican corn, melt the butter and mix in Parmesan, spices, and lime zest.
  6. Let the corn cool for 5 minutes, then peel back the husks.
  7. Brush the corn with the Mexican butter or butter and season for classic corn.
