Grilled Corn with Cilantro Lime Butter

Ingredients

The corn

  • 4 ears corn

The vegan cilantro lime butter

  • 3 tablespoons margarine, non-dairy (or vegan butter)
  • 1 unit lime, zested and juiced
  • 1 tablespoon agave syrup (optional)
  • 1 clove garlic, finely minced
  • 1 small jalapeno, seeded and finely chopped
  • ΒΌ cup finely chopped cilantro

Instructions

  1. Prepare the corn by removing the outer leaves and silk.
  2. Heat the grill over medium-high heat.
  3. Place the corn on the grill, turning frequently, and cook for about 15-20 minutes until tender and golden brown.
  4. While the corn is cooking, prepare the cilantro lime butter by mixing together the margarine, lime zest and juice, agave syrup (if using), garlic, jalapeno, and cilantro in a small dish until thick.
  5. Once the corn is done, place it on a platter and brush the cilantro lime topping over the hot corn, allowing it to melt.
  6. Serve immediately.
