Ingredients

Chickpea burgers

  • 1 can chickpeas, drained, rinsed, and patted dry (about 1 ¼ cups)
  • ¾ cup cooked farro
  • ½ cup shredded carrots, squeezed dry
  • ¼ cup diced red onion
  • ¼ cup finely chopped parsley
  • ¼ cup finely chopped cilantro
  • 2 large eggs (or flax eggs)
  • 1 tablespoon ras el hanout (Moroccan spice blend)
  • 1 tablespoon tomato paste
  • 3 cloves garlic, minced
  • to coat pan vegetable oil

Optional for serving

  • 4 whole wheat hamburger buns
  • to taste lettuce
  • to taste sliced tomato
  • to taste sliced cucumber
  • to taste sliced onion

Instructions

  1. Mash chickpeas, farro, carrots, diced onion, parsley, cilantro, eggs, ras el hanout, tomato paste, and garlic, leaving some larger pieces for texture.
  2. Quarter the chickpea mixture and form each portion into patties, pressing until they stick together.
  3. Coat a large cast iron pan with vegetable oil and heat over stovetop or grill.
  4. Spread patties in a single layer on the hot pan and cook for 4-5 minutes until the bottom is golden brown.
  5. Flip the patties and cook for an additional 3-4 minutes until both sides are golden and crispy.
  6. Serve on a bun with lettuce, tomato, cucumber, and onion if desired.
