Moroccan Spiced Lamb Burgers

The pistachio feta pesto

feta cheese, crumbled

Instructions
- Combine the burger ingredients in a bowl and mix until just combined, then form into 4 patties and refrigerate.
- For the chutney, sauté the red onion in olive oil until soft, then add apricots, red pepper, and jalapeño, cooking until softened.
- Stir in apple cider vinegar, honey, cayenne, salt, and pepper, and simmer until thickened, then mix in cilantro and cool.
- For the pesto, mix feta, olive oil, cilantro or mint, pistachios, and crushed red pepper in a bowl and let sit for 15 minutes.
- Grill the burgers to desired doneness, then serve on naan or pita with chutney and pesto.
