Moroccan Spiced Lamb Burgers

Ingredients

The burgers

  • pounds lean ground lamb
  • 2 tablespoons fresh cilantro or parsley, chopped
  • 1 clove garlic, minced or grated
  • 1 teaspoon fresh lemon zest
  • 1-2 tablespoons harissa or ½ teaspoon cumin + pinch of cayenne pepper
  • ½ teaspoon cinnamon
  • 4 pieces homemade Naan or Pita Bread, toasted

The apricot chutney

  • 6 pieces ripe apricots, diced
  • ½ a red onion, chopped
  • 1 small red pepper, diced
  • 1 jalapeño, seeded + diced
  • ½ cup apple cider vinegar
  • ¼-⅓ cup honey
  • ¼ teaspoon salt + pepper
  • pinch cayenne
  • 2 tablespoons fresh cilantro, chopped

The pistachio feta pesto

  • cups feta cheese, crumbled
  • 4 tablespoons olive oil
  • 2 tablespoons fresh cilantro or mint
  • 2 tablespoons salted pistachios, chopped
  • pinch crushed red pepper

Instructions

  1. Combine the burger ingredients in a bowl and mix until just combined, then form into 4 patties and refrigerate.
  2. For the chutney, sauté the red onion in olive oil until soft, then add apricots, red pepper, and jalapeño, cooking until softened.
  3. Stir in apple cider vinegar, honey, cayenne, salt, and pepper, and simmer until thickened, then mix in cilantro and cool.
  4. For the pesto, mix feta, olive oil, cilantro or mint, pistachios, and crushed red pepper in a bowl and let sit for 15 minutes.
  5. Grill the burgers to desired doneness, then serve on naan or pita with chutney and pesto.
