Instructions
- Prepare the harissa aioli by whisking mayo with harissa paste or spices and set aside.
- Make quick pickled red onions and refrigerate them.
- Preheat the grill to medium-high.
- In a bowl, combine ground lamb with onion, garlic, spices, salt, and pepper. Form patties and set aside.
- If using, crisp bacon slices and set on paper towel.
- Slice the cheese.
- Grease the grill and grill lamb patties for 4-5 minutes on each side, closing the lid. Add cheese during the last minute to melt it and toast the buns.
- Assemble the burgers by spreading harissa aioli on both sides of the buns, layering the lamb burgers, optional bacon, arugula, tomatoes, and pickled onions, then topping with the bun.
