Instructions
- Mix olive oil, Dijon mustard (if using), dill, mint, parsley, garlic, salt, and pepper in a large bowl.
- Add the ground lamb and mix gently with your hands until just combined.
- Divide the mixture into 4 patties, about ½ inch thick, making a thumbprint in the center of each.
- Preheat a grill or skillet over medium-high heat and add additional oil if using a skillet.
- Cook the burgers for 4-5 minutes on one side until browned, then flip and cook for another 2-3 minutes until done to your liking.
- Remove from heat and let the burgers rest for a few minutes before serving.
