Instructions
- Make the rosemary pesto by combining sunflower seeds, garlic, and lemon juice in a food processor and pulse until combined.
- Add fresh basil and your choice of greens, then remove rosemary leaves from the stems and add them.
- Season with salt and pepper, then stream in olive oil while processing until smooth.
- Shape ground lamb into 3-4 burger patties and season with salt and pepper.
- Heat a skillet over medium heat and cook the lamb patties for about 3-4 minutes per side.
- Serve the burgers over greens with a dollop of rosemary pesto and any additional toppings like strawberries or sautéed peppers.
