Ingredients

Rosemary Pesto

  • ½ cup raw unsalted sunflower seeds
  • 2-3 cloves garlic
  • 1 unit lemon
  • 1-2 big handfuls fresh basil
  • 2-3 big handfuls fresh spinach, arugula or baby kale
  • 1-2 sprigs fresh rosemary
  • to taste unit salt and pepper
  • ½ cup olive oil or avocado oil

Lamb Burgers

  • 1 lb ground lamb
  • to taste unit salt and pepper

Instructions

  1. Make the rosemary pesto by combining sunflower seeds, garlic, and lemon juice in a food processor and pulse until combined.
  2. Add fresh basil and your choice of greens, then remove rosemary leaves from the stems and add them.
  3. Season with salt and pepper, then stream in olive oil while processing until smooth.
  4. Shape ground lamb into 3-4 burger patties and season with salt and pepper.
  5. Heat a skillet over medium heat and cook the lamb patties for about 3-4 minutes per side.
  6. Serve the burgers over greens with a dollop of rosemary pesto and any additional toppings like strawberries or sautéed peppers.
