Ingredients

The burgers

  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 cups watercress, roughly chopped
  • 3 cloves garlic, minced
  • 2 15-ounce cans chickpeas, drained and rinsed
  • ½ cup Panko breadcrumbs
  • 1 large egg
  • 1 small lemon, zest and juice
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper

Spicy Garlic Aioli

  • ¼ cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon Sriracha or chili garlic sauce
  • 2 cloves garlic, peeled and minced
  • to taste coarse salt and ground black pepper

To Assemble Burgers

  • 4 whole grain buns, toasted
  • to taste sliced avocado
  • to taste sliced tomato
  • to taste watercress

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat and sauté the onion until soft.
  2. Add watercress and garlic to the skillet and sauté until the watercress wilts.
  3. Transfer the mixture to a food processor and add chickpeas, breadcrumbs, egg, lemon, chives, salt, and pepper. Process until smooth.
  4. Form the mixture into 4 equal-sized patties and refrigerate for at least 1 hour.
  5. For the aioli, whisk together yogurt, mayonnaise, chili garlic sauce, garlic, and season with salt and pepper. Refrigerate.
  6. Heat the remaining olive oil in the skillet over medium-high heat and cook the burgers for 4-5 minutes on each side until crispy.
  7. Serve the burgers on toasted whole grain buns with avocado, tomato, watercress, and aioli.
