Chickpea Burgers

Spicy Garlic Aioli

plain Greek yogurt

To Assemble Burgers

whole grain buns, toasted

watercress
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat and sauté the onion until soft.
- Add watercress and garlic to the skillet and sauté until the watercress wilts.
- Transfer the mixture to a food processor and add chickpeas, breadcrumbs, egg, lemon, chives, salt, and pepper. Process until smooth.
- Form the mixture into 4 equal-sized patties and refrigerate for at least 1 hour.
- For the aioli, whisk together yogurt, mayonnaise, chili garlic sauce, garlic, and season with salt and pepper. Refrigerate.
- Heat the remaining olive oil in the skillet over medium-high heat and cook the burgers for 4-5 minutes on each side until crispy.
- Serve the burgers on toasted whole grain buns with avocado, tomato, watercress, and aioli.
